Mashed Butternut Squash
Ingredients: (organic if possible)
Butternut Squash
Olive Oil
Salt
Garlic Powder
Pepper
Grass-fed butter
1/4 cup water
Instructions:
Preheat oven to 375 degrees
Cut squash in half length-wise and scoop out the seeds
Season “meat” side with generous amounts of olive oil and 1/2 tsp of salt, pepper and garlic powder
Place squash halves face down on a rimmed cookie sheet or roasting pan
add water to pan
Cook uncovered for 45 minutes
Let cool for 5 minutes
Scoop out the yummy squishy insides
Add 1/2 cup of butter and mash with a fork (or electric mixer if you want extra whipped!)
